Many people are curious about the story behind ZIMMZ BAR-B-Q SAUCE, and it is quite a story of how we came to the name ZIMMZ. Initially, the sauce was to be named in honor of my late grandmother's maiden name, TUBBE (tub-be). She was married to my grandfather, D.D. Massey. The son of my great-grandfather (Frank C. Massey) owned a Barbecue Joint in the first Capital of the Republic of Texas⏤, West Columbia, Texas, outside of Houston. The "Big Texas Size Family Fish" story says that Bing Cosby and his wife, Kathryn Crosby, would frequent the restaurant and love the food and barbecue sauce when they were in town. I repeatedly heard this story from my mother, but I was skeptical.
Saying, "Mom, there is no way Bing Cosby and Kathryn Crosby, two major Hollywood stars, would go to West Columbia, Texas." Yet, that story has never died. So, what did a skeptical grandson do? On September 17, 2018, after filing for Articles of Organization for (TUBBE'S BAR-B-Q LLC) in honor of my grandmother. I set out to prove two major Hollywood stars would not eat in a Barbecue Joint in West Columbia, Texas.
What was my discovery? It was Kathryn Crosby, who was, in fact, born and raised in West Columbia, Texas. WOW! I was blown away by the "Big Texas Size Family Fish" story. It may be true. I can not prove or disprove that Bing Cosby and Kathryn Crosby would eat at my great-grandfather's restaurant. But they may have done just that when visiting family and friends in town. And my Barbecue-lover friends, that is very⏤cool!
Fast forward from the mid-1930s when they started the restaurant to today, the question is. If you were to honor your late grandmother's maiden name, how did you end up naming the sauce ZIMMZ? We foresaw no problem naming the sauces we created after my grandmother's maiden name, TUBBE (tub-be). Based on my great-grandfather's foundation, which my grandfather published the original recipe in a Church's yearly cookbook my mother gave me, with my passion for barbecue, I want to put a little of my love into the sauce, and that's what I did perfecting the sauce to its old glory days. Now, a tad sweet and just the right heat, our sauces rival the best. In 2019, COVID-19 hit the world and slowed us down tremendously, and on May 23, 2023, we filed for our registered trademark (TUBBE'S BONAFIDE BAR-B-Q SAUCE, Serial 98008642). This is all public information.
Let me first state the following. I do not believe Mr. Stubblefield would have objected to us honoring my grandmother's maiden name, TUBBE (tub-be), in the first branding of our sauce.
The USPTO approved and published our trademark for TUBBE'S BONAFIDE BAR-B-Q with a disclaimer to BAR-B-Q in their Gazette. We had the name we wanted per USPTO until ⏤ . The Big Corporation of Mr. McCormick (One World Foods) opposed us using and honoring my grandmother's maiden name. They stated that you, the Customer, would be confused between the two brand names TUBBE'S (tub-be plural) vs. STUBB'S (stuhbz). I will leave that for the Customers to reason.
Of course, being a start-up company, we could not fight the Big Boys on the block, and we understand business but disagree with their multi-million dollar lawyers. All we wanted to do was honor my grandmother, my grandfather's wife, D.D. Massey worked with his brother in their family restaurant as a teenager. We never imagined anyone would ever see a conflict in the name TUBBE (tub-be). To this day, we know no confusion between the two brand names, as the USPTO saw no confusion between the two brands. History shows Mr. Stubblefield would not see any conflict between the two brand names⏤he was all about: family, friends, barbecue, and music. We believe the trials and tribulations of business come with a purpose, and our brand, ZIMMZ, still gets to honor someone we all love very much.
Outside of ZIMMZ. I like three barbecue sauces and don't mind telling you about them: Stubb's, Sonny's, and Franklin's Spicy. At the time of this writing for our website, we have ZIMMZ, Stubb's, and a bottle of RUFUS TEAGUE (Touch O' Heat) in our fridge. I have always wanted to try it, and it is quite tasty. There are many other barbecue sauces I want to try. One is Goldee's, and I'm sure I will soon. Here at ZIMMZ, we love barbecue sauces and fair competition. We are so confident that we don't mind saying that our premium quality sauces rank with the 'creme de la creme.' And the name ZIMMZ comes from a place of honor in our hearts. ZIMMZ is named after one of our late best friends from childhood who played for the Florida Gators, a two-time All-American (1985, 1986), All-SEC (1985), Gator Hall of Fame (2016), All-Madden Team (1990), and Dallas Cowboys⏤Jeff Zimmerman, the "Great Wall of Florida." A lot of great memories and great High School times. Peace brother!
And that is how we got our name, ZIMMZ. 😀
The answer to that question is purely subjective to your taste buds. When it's 'Saint Louis Rib Day' at ZIMMZ house, we usually smoke two racks of ribs. One slab of ribs with our favorite rub with a side of ZIMMZ for dipping, The second slab of ribs smoothed with (7oz.) of ZIMMZ BAR-B-Q SAUCE.
All meats, Beef, Pork, Chicken, Fish, Wild Game, and it makes an excellent BBQ Chicken Jalapeno Pizza. We even know people who put it on their eggs and love it.
Yes, we do recommend refrigerating ZIMMZ sauces after opening and shake well before each use.
Our sauce has a shelf life of one year (12 months, 365 days) unopened. Our sauce has a high apple cider vinegar and tomato base content that is a natural preservative. Our sauce has classification of (Acid with pH: 3.72).
